Bajra is one the most common grains consumed widely in rural India. Bajra Aloo Roti recipe is a popular flat bread of Haryana cuisine. It is also popular in the state of Rajasthan, Maharashtra, and Gujarat. It is one such delicacy which is very healthy and delicious. These rotis are preferred in the winter season to avoid any digestive problems.

Bajra atta kneaded with boiled potatoes, chopped onions and some masalas. The dough then rolled out into thick and flavourful rotis. You can serve Bajra Aloo Roti with white butter, ghee, sabji, chutney, karhi, raita or plain curd. It is very delicious when smeared with white butter or ghee.

Ingredients

Bajra Atta (Millet Flour) – 2 cups
Boiled and Mashed Potatoes – 1/2 cup
Chopped Onions – 2 tbsp
Red Chilli powder – 1/2 tsp
Chopped Coriander leaves – 1 tsp
Salt to taste
Ghee – 1 tbsp

Method

Mix bajra atta, boiled and mashed potatoes, chopped onions, chopped coriander leaves, red chili powder and salt in a bowl. Mix all the ingredients and knead it to a smooth dough by adding warm water. Divide the dough into medium size balls. Take a ball and roll it into a circle like a thick roti. Note that bajra rotis are a little bit difficult to roll. So keep the dough very soft. Dust the roti with enough flour and roll it slowly and gently. Heat a non-stick tawa (griddle). Place the rolled roti on hot tawa and cook on medium heat from both sides until brown spots appear. Serve hot with white butter, ghee, raita, plain curd, chutney or sabji.
