Baingan (Eggplant) is also known as aubergine. Baingan Bharta is a popular North Indian dish made by roasting the baingan (eggplants) over an open fire until they are soft. Baingan flesh is mashed well and then cooked along with tomatoes, green peas, onions, ginger garlic paste and basic spices. 

The smoky flavour that comes from roasting the baingan over an open fire is what makes this dish so amazing. Baingan bharta is delicious to eat and a must on every Punjabi menu. Baingan bharta is a perfect dish to go along with chapatis, rotis or paranthas.

Ingredients

Baingan (Eggplants) – 2 (large sized)
Boiled Green peas – ¼ cup
Chopped Onion – 2 (medium sized)
Chopped Tomatoes – 3
Red chili powder – 2 tsp
Turmeric – 1 tsp
Coriander powder – 1 tsp
Oil – 4 tbsp
Ginger garlic paste – 2 tsp
Garam masala – 1 tsp
Chopped Coriander leaves – 1 tbsp
Salt to taste

Method

Prick and roast the baingan (eggplants) over the medium flame of fire till they are soft, well cooked and the skin has charred completely. Let them cool. When at room temperature remove the skin and mash the eggplants pulp. Heat oil in a pan. Add chopped onions and fry till light golden brown in colour. Add ginger-garlic paste and stir for ½ a minute. Add chopped tomatoes and stir till oil separates. Add red chili powder, coriander powder, turmeric, garam masala, and salt. Stir till the masala is cooked. Add boiled green peas and mashed eggplant. Mix well. Allow mixture to simmer for 4-5 minutes over low heat. Add chopped green coriander and mix well. Serve hot with chapati, roti, naan, and paratha.
